Smoking with vine-cuttings (sarments in French, sarmenti in Italian) is a tradition in winemaking areas, especially in the Loire and Piedmont, and gives meats fantastic smoky flavours. As these cuttings are three years old (2017 prunings), they burn super hot too! We have thrown them on top of hot coals to give a Côte de Boeuf both a great char and complex, smoky notes. Lit and put in a hot-box, they are fantastic for smoking a wild salmon.
