The Wine: From the vineyard “Les Enceints,” high above the village of Pierreclos at 380 meters above sea level. The vines face due south and, as such, reach full maturity, while the high altitude ensures the grapes stay fresh at night, preserving acidity. The soil here is a decomposed granite, leading to grapes with a generosity to balance the natural zip of Aligoté.
Hand harvested, the grapes were chilled, foot-crushed, and then pressed over five hours in a basket press, with fermentation in a large concrete tank. Left on gross lies for 11 months, the wine was bottled unfined with only very light filtration.
12% ABV. Drink within 6 months of purchase and 3 weeks once open.
