From two parcels of Chardonnay above the village of Savigny-lès-Beaune; “Dessus Les Vermots” and “Les Gollardes”, all on a steep slope facing south west with poor, white soils from millenia of erosion and cooled by the air coming down the valley from the Haute-Côtes. All of these attributes lead to a wine that is ripe and generous in weight while still retaining a core of minerality and drive.
Hand-picked, chilled overnight, foot-crushed in cases. Pressed for six hours without additions of SO2 or enzymes. The juice was oxidised in tank for several hours and then racked to barrels with all of the solids (bourbe) for fermentation by indigenous yeasts. Aged on full lies, without stirring or racking, for 12 months and then bottled under DIAM 10 after a very light filtration.
The fruit is sourced from excellent white wine vineyards behind the village, Dessus Les Vermots and Les Gollardes. The grapes were foot crushed for enhanced phenolics, as well as giving a fuller yellow colour. I love this nose. Great tension, stones first with a light lemon rinse, and just enough flesh behind. A reductive note throughout. Very good. 5 Stars, 91 points - Jasper Morris MW
There’s some extra richness here from skin contact adding texture to the already ripe fruit with lemon, pear and a bit of baked apple 16.5 — Matthew Hayes, www.jancisrobinson.com
This has loads of sapidity and bite, together with inviting warm but light brioche characters. From cool parcels, often difficult to ripen, but which really deliver in these warm vintages. Sarah Marsh MW
