100% whole cluster old-vine (60+ years) on the slopes of Nyons, in the Northern part of the Southern Rhône. Cool nights keeps the acidity bright, and being further north than most of the Côte du Rhône, the fruit spectrum is more crunchy blue fruits than jam. Vinified no SO2, indigenous yeasts,and minimal pump-overs just for aeration and no pigeage, keeps the tannins soft and fine. Aged in old Burgundy barrels for nine months. No enzymes, no fining, no filtration. Perfect companion to Bavette and chips!
