The vineyard of “Haut de Chavannes” is high up on the slopes of Mont Brouilly. The excellent exposure, old vines and the signature rocky, blue granite of the appellation, gives the wine both concentration and finesse, and a flavour profile that is unique to this under-rated appellation. Hand picked, placed in a vat as whole clusters and fermented for 14 days by native yeasts, using only CO2 to guard freshness. Aged in old Burgundy barrels for ten months.
